Hoppin' Jalapeno & Bacon Hummus

Back to getting back to making hummus on a weekly basis for lunches and snacks. Here is the creation for this week:

Hoppin' Jalapeno & Bacon Hummus

1 1/2 cups garbanzo beans (I use dried and cook in my crockpot but you can use 1 can - 15 oz)
1/4 cup olive oil
1 tablespoons lemon juice
1 tablespoon Hoppin' Jalapeno & Bacon Dip Mix

Mix together in food processor, let blend in fridge and ENJOY!

So easy and SO good!

Stuffed Peppers - Grill Style

Green Peppers were on sale this week and Kevin mentioned wanting stuffed peppers. I usually make stuffed peppers w/ hamburger, rice, and veggies and cook them in my crockpot while at work. However, I also found corn on the cob for a great price and wanted to grill that for dinner. I decided since we were going to be firing up the grill I would try the peppers on there as well.

I added a new twist to the recipe and they turned out great! Will for sure be making these again - grill or crockpot :)

Stuffed Peppers

Ingredients:
6 peppers - washed and cut in half
1/2 lb to 1 lb ground meat (I actually went vegan and used LifeLight Meat)
Green Onions
Goat Cheese

Directions:
* Cook meat w/ seasonings and Bayou sauce. Add chopped green onion and goat cheese to meat mixture, heat for 2 minutes.
* Stuff mixture into peppers and lay on grill (do not flip, you will lose the meat mixture) until peppers look done

Zucchini Pancakes - The Tastefully Simple Way!

I posted a Zucchini Pancake Recipe a couple months ago that we love however I decided to redo the recipe using Tastefully Simple. I don't go a day without cooking using my Tastefully Simple ingredients so I wanted to make sure I posted this one for all of you as well.
Promise these are amazing, Kevin asks for them all the time! I can't keep zucchini in the house with all the great stuff you can do with it! Hears to hoping my garden produces a lot this year.

Zucchini Pancakes


Ingredients

Directions

  • Mix all ingredients together (minus the oil) - heat skillet w/ oil - place about 1/4 cup of the mixture in skillet and make a flat patty - cook and flip browning on both sides.
  • You could also consider using Season Salt - Fiesta Party Dip - Bacon Bacon - etc! Get creative!
